SWEET POTATO PIE

The sweet potato is a fine food for individuals engaged in heavy muscular work, as the large quantities of vitamins and minerals contribute to the required body strength necessary for hard labor.  It is an easily digestible food and is good for stomach ulcers and inflamed conditions of the colon and muscles.  It is a good food for persons suffering from low blood pressure and from poor blood circulation.  Persons suffering from hemorrhoids find this food to be good for them, and the sweet potato is helpful in cases of diarrhea.Baked Sweet Potato

Sweet potatoes are good to eat any time, but with the Holiday Season many of us enjoy it as a sweet potato pie.   There are numerous ways of preparing the sweet potato.  It can be baked, boiled, candied, casseroled, creamed, fried, grilled, hashed, mashed, stewed and stuffed.

Probably the most delicious sweet potato is the potato baked in its jacket.  The potatoes are first washed and blemishes removed.  They are then baked in a moderate oven of 350oF until easily pierced with a fork, usually from thirty to forty minutes.  After removal from the oven, the potato is slit and a large piece of butter may be inserted into the slit for additional flavor, although the potato without the butter is tasty enough for most individuals.  Some even sprinkle cinnamon on top to give it that a real zing to the taste buds.

Another method of preparing sweet potatoes is to parboil them until the skins will slip off easily.  (To parboil means to boil partially.)  They may then be rolled in finely chopped pecans and placed in a well-greased baking dish.  A light coating of honey may then be poured over the potatoes.  The dish should then be covered and baking done in a  moderate oven of 350oF for thirty minutes.  A popular sweet potato dish is to cook them with the skins on after carefully washing them.  They usually taste best when boiled in slightly salted water.  They are cooked until tender for from twenty to thirty minutes.  After being cooked, the jackets are removed and they are served piping hot.

Sweet potato is rich in Vitamin A (betacarotene), Vitamin Bs (thiamine, riboflavin, and niacin) and Vitamin C. Both Vitamins A and C are powerful antioxidants that work in the body to remove free radicals, which are chemicals that damage cells. It may be helpful for hemorrhoid because of its high fiber content. Sweet potato is known to be a good food for people involved in heavy muscular work, since this food is high in vitamins and minerals. Sweet potato may help prevent cancer in glands and organs with epithelial tissue due to its high Vitamin A content. Sweet potato is a good food for diabetics, because it helps stabilize blood sugar levels.
